Whenever Chef Cayt’s family goes camping, this recipe is their go-to for breakfast. It is super easy to make bigger batches of it, and we love to make it on a camp chef stove and griddle. It’s a perfectly savory breakfast that everyone will love to start out their day with! You can omit the ingredients that your family doesn’t like, but you can also easily add in other veggies or breakfast meats that they do like to make it suit your tastes.

  • Frozen Shredded Hash Browns: Using frozen hash browns is what makes this recipe come together so fast, but you can also use homemade hash browns if you prefer. Cubed or diced hash browns work just as well and provide a slightly different texture.
  • Ground Pork Sausage: There are lots of varieties of sausage that you can use, so just go for your favorite. Spicy sausage would be a great option, but original will be super flavorful too.
  • Diced Ham: We like having double the protein in this recipe, but feel free to use whichever breakfast meats in this recipe that you want. If you’re not big on ham, bacon also works great.
  • White Onion: You’ll dice this up and sauté it, and it will add great flavor to the hash.
  • Red Bell Pepper: We like using a red bell pepper in this, but any color of bell pepper will work great.
  • Cheddar Cheese: We love the sharp, classic flavor of a cheddar cheese, but feel free to switch it up and use your favorite cheese here.

Thawing Hashbrowns

The refrigerator method is the best option for even thawing and minimizing excess moisture. Simply place the frozen hash browns in their original packaging or a sealed container in the refrigerator. Allow them to thaw overnight, or for at least 6–8 hours, and they’ll be ready to cook with no extra prep.

The microwave method is the quickest way to thaw hash browns. Spread them on a microwave-safe plate in a single layer and use the defrost setting, heating them in 30-second intervals. Flip them occasionally to ensure even thawing, and pat dry with a paper towel to remove any excess moisture before cooking.

If you’re pressed for time and need to skip the thawing process altogether, you can cook hash browns straight from frozen. Add a bit of extra butter or oil to a skillet and cook them on medium heat to help them cook evenly and prevent sticking. Just keep in mind that cooking directly from frozen may take slightly longer than if they’re thawed.

Serving Suggestions

This is a great recipe for you and your family to experiment with and make your own. We love to eat it with salsa or hot sauce to add an extra kick, and sour cream provides a little dash of creaminess as well. We sometimes also serve this meal with muffins on the side. Try it as a filling for breakfast burritos, or serve with pico de gallo.

Making Ahead

This is a great recipe to make ahead of time! You just need to make the hash and then store it in the refrigerator. When you’re ready to eat it, you’ll just reheat it in an oven in an oven-safe dish that is tightly covered with aluminum foil for 20–25 minutes at 350 degrees.

Storage and Reheating Instructions

Refrigerate leftovers in an airtight container for up to 4 days.

Freeze leftover portions in an airtight container or resealable plastic freezer bag. Thaw in the refrigerator overnight.

Reheat portions in the microwave on high in 30-second increments.
